Sweet and Spicy Avocado Toast

Prep Time: 5 minutes Cook Time: 2 minutes Servings: 2

Ingredients:

  • 2 slices fresh bread

  • 2 tablespoons Redstart nut butter

  • 1 avocado

  • 1/2 cup chopped arugula

  • 6 basil leaves, chopped

  • 2 tablespoons crumbled feta cheese

  • Half a lemon

  • 1 tablespoon olive oil

Preparation:

  1. Toast bread until golden.

  2. Spread 1 tablespoon of Redstart nut butter on each slice of toasted bread.

  3. Remove the pit from the avocado. Use a spoon to scoop out the flesh. Put it in a bowl and mash slightly with a few pinches of salt.

  4. Spread avocado on toast and top with a squeeze of lemon, arugula, basil, feta, drizzle of olive oil and sea salt flakes.
