Ibis Fattoush with Fried Pita Bread

Prep Time: 20 minutes Cook Time: 5 minutes Servings: 4

Ingredients:

  • 3 tablespoons fresh lemon juice

  • ½ cup olive oil

  • 1 small garlic clove

  • ½ teaspoon kosher salt

  • ½ teaspoon sugar

  • 2 tablespoons Ibis nut butter

  • 5 oz mixed greens

  • 1 avocado, cubed

  • 1 cup grilled or rotisserie chicken, shredded

  • 10 kalamata or calvestrano olives, halved

  • ¼ cup feta cheese

  • 1 large pita bread cut into triangles

  • 3 tablespoons olive oil

  • 2 tablespoons freshly chopped parsley and/or mint

  • sea salt flakes

Preparation:

  1. Prepare salad dressing by combining lemon juice, olive oil, garlic, salt, sugar and nut butter in a food processor or blender.

  2. Place mixed greens, avocado, chicken, olives, and feta cheese in large salad bowl.

  3. In a large skillet, heat the 3 tablespoons olive oil on medium heat. Add the pita bread and season with kosher salt and freshly cracked pepper. Cook stirring frequently until the pieces of bread are crispy and golden in color, about 5-7 minutes. Cool slightly.

  4. Drizzle desired amount of dressing over salad and mix thoroughy. Top with fried pita bread, parsley/mint and sea salt flakes.
