Jeera Biscuits with Lemon Zest

Ingredients:

  • ½ teaspoons baking powder

  • 1 ½ cups all-purpose flour

  • ½ cup butter, softened slightly and cut into pieces

  • ½ cup Ibis nut butter

  • 2 tablespoons cold water

  • 4 tablespoons sugar

  • 2 teaspoons lemon zest

  • 1 pinch black pepper

  • sea salt flakes for sprinkling

  • chili flakes for sprinkling (optional)

Preparation:

  1. Preheat oven to 350 degrees. Line 2 baking trays with parchment paper.

  2. Place flour and baking powder into a food processor and pulse for 30 seconds. Add butter and nut butter and process until well combined and mixture resembles breadcrumbs. Add 2 tablespoons cold water and process until a dough forms. Turn onto a lightly floured surface and knead until smooth. Divide mixture in half, roll into logs and wrap in parchment paper. Refrigerate for at least 30 minutes or until firm.

  3. When dough is firm enough, slice into 1/2 inch slices and place on baking tray. Sprinkle with sea salt flakes and chili flakes if using.

  4. Bake for 20 minutes until golden.
