Whole Wheat Quetzal Pancakes

Ingredients:

  • 1 1/4 cups whole wheat flour

  • 1/2 teaspoon kosher salt

  • 1 tablespoon baking powder

  • 1 egg

  • 2 tablespoons melted butter/oil

  • 1 1/4 cups whole milk

  • 3/4 cup Quetzal nut butter

Preparation:

  1. In a bowl, mix flour, salt and baking powder. Once well combined add the remaining wet ingredients.

  2. Heat a pan over medium low heat. Add a small pat of butter to the pan. Scoop the batter into the pan. When the batter starts to bubble and the edges look dry, flip the pancake. Cook for 2 minutes on the other side.

  3. Take the pancakes out of the pan and serve with toppings of choice.

  4. Topping ideas: bananas, berries, powdered sugar, berry or maple syrup. whipped cream and chocolate chips
